Minted Carrot and Cabbage Slaw
How to Make It
In a medium skillet, toast almonds over medium-low heat, tossing occasionally, until lightly golden, about 5 minutes. Transfer to a plate and let cool completely.
In a large bowl, whisk together yogurt, vinegar, honey, oil, 1/4 teaspoon salt and generous pinch pepper. Add carrots, cabbage, raisins, mint and nuts; toss to combine. Adjust seasoning to taste. Chill at least 30 minutes or up to 2 hours before serving.
